Chicken Wraps:

For this one you will be substituting the high-carb wrap for low-carb, low-calorie lettuce leaves. No need to worry about losing flavor from the lack of bread, because this recipe is packed with savory seasonings. You’ll need the following ingredients to execute this simple and tasty meal…

2-3 leaves Lettuce                                            2 tbsp cider Vinegar

3.5 oz Chicken                                                 ¼ tsp Sea Salt

¼ tsp Onion Powder                                         1 clove Garlic

1 tbsp Powdered Ginger                                    ¼ tbsp. Pepper

MCT Oil 3tbsp

As your oven is preheating to 350 degrees, you can set aside your lettuce leaves. These will be used when it’s time to serve the main meal. After you chop up the chicken you will put it in a baking pan and combine it with the rest of the ingredients. Bake the mixture for 30-40 minutes or until the chicken is cooked all the way through. Scoop the mixture onto the lettuce leaves and enjoy.

Next up on the summer recipe list is....

Lively Citrus Basil Chicken, which is sure to get your palate smiling. You’ll need the following ingredients…

Salt & Pepper to taste                                       3.5 Tomatoes, chopped

Additional Herbs & Spices as desired                1 Orange, peeled and chopped

3.5 oz Chicken                                                 4-5 leaves Fresh Basil

Juice of ½ Lemon                                             1 leaf Lettuce

Layer the bottom of a skillet with MCT oil, salt, pepper, herbs, and spices before you add the chicken. Then you will drizzle the chicken with lemon juice and a bit of water if additional moisture is needed. As the mixture is cooking for 2-3 minutes, you can get your chopped tomatoes, chopped orange and basil ready. Once the 3 minutes is up, adjust the heat so it is simmering gently, allowing the juices to penetrate the chicken. Be sure to flip the chicken over so both sides are fully cooked. Combine the chicken and sauces and serve on top of a lettuce leaf. Feel free to add salt and pepper if you feel the need.

While these recipes are great all year, their light and citrus flavors are sure to be a big hit in the summer months. If you are bringing them to a barbeque, you can cook them in advance and heat them up upon arrival.
